PUTIEN Bian Rou Soup is one of must try item if you visited this Michelin star restaurant chain. This is a very traditional Fujian dishes.
Accordingly to Putien website, “Bian Rou (Wanton) Soup is a Fujianese specialty with more than 500 years of history. At PUTIEN, we spare no efforts in keeping this precious craft originated in Chinese imperial dynasty of Qin. The delicate Fujian-style wonton wrapper is made of pork meat. Each time, 3 hours of continuously pounding and rolling on the meat paste is required before it becomes as thin as paper, making the handcrafted wanton springy and palatable with every bite.”
I initially thought that the Bian Rou must be like wantan, in fact, it taste quite different from the kantonese wantan, and the size is very tiny. One serving is hardly enough for me. The soup is topped with seaweed.
Please remember do order other delicious dishes as well, you can treat it like ordinary soup that can’t filled up your stomach. Anyway, it isn’t that bad as the of the Bian Rou is really good.
Putien One Michelin Star 100-Second Stewed Yellow Croaker is another recommendation from this Fujian restaurant. The Yellow Croaker is one of the popular fish for the Fujian area.
The fish texture is fine and not many thorns. It is served in the yellow claypot. We have this fish with special limited time offers half priced.

Putien Michelin star restaurant signature starter Braised Pig Intestines. Now, I am not the fans of animals internal organs, but this one is within my acceptance level.
“12 inch-long intestines are meticulously chosen and tirelessly washed, looped, cooked, extended, selected and braised to perfection with our 12 spices house sauce. This intricate and complex method ensures that every bite of our ‘9 fold’ intestines gives you that springy texture that you love,” claim at Putien website. They further explain about the meaning of 9 folds.
Nine-fold Intestine
Using only the delicate part between the large and small intestine, it is hand folded manually loop after loop, before being braised for at least 45 minutes. This intricate and complex method ensures a springy texture with every bite, only available in limited quantity on daily basis.
First of all, this braised 9 folds pig intestines doesn’t smell bad, in fact, you can taste slight of the spices taste when taking it. I believe they did very well on the braising process to remove the unpleasant smell and taste. When you put in your mouth, it is very tender. Even the kids can accept it.
It just looks like the sausage cut into smaller pieces. The texture is very soft, you can eat it without much chewing. Recommend fujian starter for anyone who likes the internal ingredients.
Putien the One Star Michelin Fujian restaurant offers one of the very popular home cook spinach with century eggs. There are nothing special about the spinach or the eggs, or the plenty of whole garlic toppings, but the thick supreme stock.
The signature dish is served in a thick and milky stock which perfectly blended the multiple ingredients in it. I am not sure how they made the supreme stock, but I believe it must be one of their secret recipe.
This dish is very suitable to pair with a bowl of rice.
